French artisans use “Day of the Fromage” to save cheese with “healthy” raw milk

French artisans used their national “Day of the Fromage” to launch an impassioned defence of traditional cheesemaking.Where France’s hundreds of cheeses were once only made with raw milk, modern cheesemaking now largely uses pasteurized milk which is more suitable for mass production and export across the globe.Proponents say the pasteurized variety is safer but raw cheese defenders argue that the process kills bacteria which have health benefits and improve the taste.A recently-published study published by French immunologist Dominique Angele Vuitton looking at a thousand children over 14 years in five European countries indicated that raw milk has a beneficial impact on allergies and chronic respiratory diseases such as asthma.Children and pregnant women who drink raw milk showed a different, stronger immune system, according to the report.Carlos Yescas is the program director for the Oldways Cheese Coalition which fights for the preservation of traditional food in the United States, a country which has traditionally been wary of raw milk.
