A revamped falafel dish has Israelis queuing

A cross-breed between Belgian waffles and the Middle East falafel sandwich is riveting Israelis seeking healthier street food. At the “Belgian Falafel” restaurant in Rishon Lezion, the queue of customers reached the pavement as Tali Shem Tov and her husband Almog dished out chickpea paste baked to form a pita bread-like pocket for vegetables and sauces.

The owners say their product meets the needs of an increasingly health-conscious clientele by eliminating the sugars of regular pittas as well as the oils used to fry chickpea paste into traditional falafel balls.
