The food waste eaterie that wants to put itself out of business

Food that would otherwise go to waste is being served up to happy diners in the southern Swedish city of Malmo. At Spill restaurant, meals are made using ingredients that would otherwise be disposed of by local suppliers.

Co-owned by Erik Andersson, the restaurant aims to tackle food waste so successfully that there will be no need for his business to exist within a few years. Diners are happy with the results of his work.

The Food and Agricultural Organization around one third or 1.3 billion tonnes of the food produced for human consumption goes to waste every year. In Europe and North America, consumers waste between 95-115kg per capita each year.
